3 med eggs
1 med. Onion diced
2 Tbsp. vegetable oil
4 cups Cooked rice
4 oz. mixed peas and carrots
Soy Sauce to taste
Preparation
Lightly beat the eggs with a pinch of the salt. Heat oil in a preheated wok or skillet, and lightly scramble the eggs. Add the rice and stir. Add the remaining salt, onions, and peas. Blend well and serve.
Note: Get creative by adding pork or chicken and turning this side dish into a complete entree
